March is National Nutrition Month, so most of us dietitians are celebrating "Nutrition from the Ground Up" which focuses on getting back to basics: simple foods and simple food preparation and, as always, the importance of having family meals together.
For me, the basics are whole grains with either some beans, nuts or cheese and lots of veggies everyday. They are simple to prepare and there are so many combination possibilities that I’m never bored. Just this week, I pick up Lundberg’s new rice bowls, added some cubed baked tofu and a package of Broccoli Wokly, topped it with some of the Ginger People’s Peanut Sauce and in less than 15 minutes, we were eating dinner.
