Stir together 1/2 cup light sour cream, 2 tbsp. chopped fresh dill and 1 tbsp. rice vinegar (not seasoned) in a small bowl; season to taste with salt and pepper. Gently stir into 1 lb. cooked and cooled, cubed red potatoes, 1/4 cup sliced green onions and 1 chopped hard boiled egg. Serve immediately or chill until ready to serve.
